Summer Salad Recipe (Vegetarian)
- A huge handful of Romaine Lettuce
- Brown Rice + Quinoa (mix, about 1/4 cup)
- Raw Pumpkin Seeds (about 1 TBSP)
- Carrots (however many you want!)
- Tofu (from Wegmans.. it's so good. Give it a try!)
- Drizzled with Bolthouse Farms Balsamic Dressing
And that's it! I love my salads to be super simple, especially when I'm just whipping them together. Seriously.. give something new a try, you may be really surprised!
