Normally Monday nights dinner turns into the rest of the weeks lunches 😍
When I meal prep on Sunday/Monday night I make it as simple as I can.
QUINOA + BEANS
1 can of kindey beans
1 can of pinto beans
1 can of diced tomatoes
1/2 can of tomato paste
1 tsp chili powder
1 tsp garlic powder
TO MAKE: Add all ingredients to the pan and heat.
SIDE: Quinoa, 1/2 cup cooked
Mix the two up when you go to eat and you have yourself a simple, delicious meal. :)
