Welcome to fall, y’all! :) AKA pumpkin pie season! And also apple season for me, I love apple everything. Anyone else? But today we’re diving into a delicious, healthy, pumpkin pie overnight oat recipe. It’s so simple to make, you’re going to love it!
PUMPKIN PIE OVERNIGHT OATS:
1/2 cup oats
1/4 cup pumpkin puree (not pumpkin pie filling)
1 TBSP chia seeds
1 TSP pumpkin pie spice
1 TBSP pure maple syrup
1/2-1 cup almond milk (enough to cover oats)
2-3 chopped walnuts (optional)
Add all ingredients to a mason jar, stir, and leave in the refrigerator overnight. Enjoy in the morning or for lunch!
