Did you know there's a national "day of" for almost every single day of the year? And there's national months too! As it turns out October is National Cookie Month!.. (I'll be googling when National Ice Cream Month is.. probably in the summer!). Either way.. who doesn't love a good cookie?! Especially when they're warm and right out of the oven.
Here's a recipe from Bolthouse Farms for "Double Dark Chocolate Cookies" paired with their new Plant Milk (which is a vegan and non-GMO alternative milk, made with 10g of pea protein and 50% more calcium than dairy milk, doesn't contain allergens like dairy, nuts and soy and intolerances like lactose and gluten!) I love that these plant milks are made from peas and have a good amount of protein in them!
Meaning you could totally eat a chocolate cookie and plant milk for breakfast and keep after your goals :)
I was really intrigued to make these cookies because one of the ingredients is avocado.. have you ever had one in a cookie!? Neither have I. So without further ado.. healthy, chocolatey, vegan, delicious cookies!
I'm honored @bolthousefarms asked me to be a part of their Bolthouse Farms Harvest Network where I get to use the juices, smoothies, dressings, and milk they send me to create fun recipes to share with you. They sent me a variety of their plant milks this time (which I am super excited about!). All opinions are my own.
Double Dark Chocolate Cookies (20 cookies)
¾ cup diced avocado
1 ripe banana (about ¾ cup sliced)
¼ cup coconut or date sugar
¼ cup Bolthouse FarmsⓇ Chocolate Plant Protein Milk
½ cup oat flour
½ cup almond meal
⅓ cup Dutch process or dark cocoa powder
½ teaspoon baking soda
½ teaspoon fine sea salt
½ cup dark chocolate chunks*
1. In a food processor** combine avocado, banana, and sugar and pulse until smooth. Add milk and pulse until combined.
2. In a medium bowl whisk together flour, almond meal, cocoa powder, baking soda, and salt. Add to food processor and pulse until just combined. Transfer batter to a bowl and stir in chocolate chunks. Refrigerate dough for 1 hour.
3. Preheat oven to 375°F. Grease a cookie sheet or line with parchment.
4.Using a tablespoon, drop dough onto cookie sheet 2” apart. Bake 12-15 minutes or until dry to the touch and set. Let cool completely.
