This dish is one of my favorite go-to dishes because... it's so easy! You just need 3 base ingredients and you're ready to go.
3 Ingredient Vegetarian Dish
1 can kidney beans
1 can diced tomatoes
1 bag of rice
Make the rice/quinoa, either in the microwave, or on the stove. Rinse beans and add them to a skillet with a little olive oil. Add in can of tomatoes and the cooked rice/quinoa. Stir together and season with cumin, chili powder, paprika, and salt n pepper (or seasonings of your choice). Bring to a light simmer and let cook together for a few minutes or until hot
Serve up and enjoy!
You can add this dish to lettuce wraps, burrito/taco shells, or eat it on it's own (or with chips!). Makes a great dip. Throw some cheese on top and you're good to go!
RICE- Swap for quinoa (1/2 cup dry)
BEANS- Use any beans you would like. Black, pinto, kidney...
TOMATOES- use your favorite salsa (1 cup) instead! A great way to add flavor if you're low on spices.
SPICES/SEASONINGS- Use hot sauce/Sriracha sauce to spice up this dish
